Fish Stock

I am preparing this tonight and thought that you guys might be interested. Don't ask me what it tastes like because I wont try it :yuk: fish.


You need to buy Campbells Real Stock for fish I actually got the recipe off the back it's for prawns but i'm using basa fillets since it has no bones.

Ingredients

1 tbls olive oil
whatever seafood you wish.
I medium onion, finely chopped
2 cloves garlic crushed
2 red chillies deseeded and finely chopped (optional)
1/2 cup white wine (optional)
375ml Campbells fish real stock
400g can diced tomatoes
1/3 cup fresh parsley

Method

Heat 1tbls oil in a large frying pan over medium-high heat. Add seafood and cook lightly
Remove to a plate cover and set aside.

Add remaining oil, onion, garlic and chilli into frying pan. Cook stirring until soft. Add wine and cook for a further 2 minutes or until wine evapourates.

Add fish stock and tomatoes, bring to the boil. Reduce heat to medium and cook uncovered for 10 minutes or until sauce has thickened slightly.

Add the seafood and parsley an cook until seafood is cooked through. Serve with pasta if desired.

:lol: just. Only kidding he loved it, well thats what he said anyway but he definately wants me to make it for him again. I might try it for him with Prawns next time. I've kept the juice it was in and am going to make some pasta and mix it in for Michael, since it was only going to be wasted.
