I made some polenta crusted chicken last night. All I did was in the dry polenta mix I added some chicken salt some herbs and spices and a good handful of parmesan cheese and then i coated the chicken with it and put it in the oven. I used drumsticks but u could use any chicken cut or fillets. I also made scalloped potato using a cream of chicken soup packet mix - i just added it to 1cup of milk and 1/2 cup of water poured it over the potatoe added some extra chopped parsley - When it was nearly cooked I sprinkled some tasty cheese on top

it does sound yummy though i'm not sure dh likes polenta even though it's probably just like bread crumbs

Sounds good Ang. I tried something similar using veal cutlets. I fried them and all the coating came off. I guess the key is to BAKE not fry. I actually make polenta about once or twice a year. I like it, Hubby loves it.

Oh we love Polenta - I usually serve sliced up in a slab with some fresh tomato sauce (not the ketchup kind
- my dad used to make it with smoked cod going through it and it was yummy - though Mels wouldn't agree

We like ours with sauce too. When I make it dh's favorite way, I saute some sausage meat with the onions when I'm making the sauce. Then I serve it in a bowl...one layer polenta, one layer sauce, one layer polenta, one layer sauce.Funny thing is...he won't eat sausages in sauce any other way, he thinks its gross | ||||

yes I love Polenta -- dh doesn't though but definately not the way dad made it with the smoked cod or sometimes with pumpkin
Definately only way to have it is the sauce.
