I got to thinking tonight.....I love potato salad but I only like it when someone else makes it.
If you make your own, what do you put in it? How do you cook the potatoes to be 'just right' ? ![]()

I peel and cube my potatoes prior to cooking and just keep an eye on it and try and drain them just undercooked i suppose. I just use plain mayonaise as my dressing and I add quartered hard boiled egg, spring onion - sometimes the red onion, chopped parsley and or some chives as well and thats it. I do put the mayonaise in while the potatoes are still warm as it mixes in a little easier then i just pop it in the fridge - looking forward to other peoples recipes as I love potato salad

Dad was German, and as such I have only really eaten German potato salad! Its very different from the Aussie Mayo based cubed salad...
6 boiled potatoes. peel after they cool down. Slice thinly, but so they dont break up. Cook 1 finely chopped onion in butter until caramalized. Put onion, 1 cup vegie stock, 4 tablespoons of olive oil, 1 tablespoon of white wine vinegar, 2 teaspoons German mustard (or hot english) salt and pepper into saucepan and bring to boil. Reduce heat and simmer for 5 mins. Add the juice of 1 lemon to sauce when you remove it from heat. Pour sauce over sliced potatoes and cool. Toss, serve with added salt if needed. Its a bit trickier than normal, but very yummy!

wow Lisselle that is very different have to give that a go for sure. My recipe is generally the same as angies or I have an alternative for mum because she doesn't like mayonnaise and that is just salt, oregano and oil dressing.

Yum ladies!
I do it the easy way... I buy the jar stuff, cube my spuds, boil them for 7 mins, drain & add jar stuff, a gazillion chopped spring onions (love 'em!!) , bacon & sometimes eggs. Then I polish it all off before it's indended use of dinner | ||||

I like the 'mayo' potato salad but I don't usually make that one myself.
I usually peel & boil yellow potatos then I chop them up and dress them with a bit of olive oil , salt, paprika,a sprinkle of garlic powder, black pepper chopped chives, chopped boiled eggs, and black olives . | ||||

I use waxy yellow spuds like nadines or dutch creams, boil them in quarters and toss them with wholegrain mustard, lemon juice and a bit of salt.... and ifg you want to be really decadent... sour cream!!! Bit different but gooood! I have to try the german recipe, I love german food!
