I think it might be the iPod touch, which as far as I can tell, is an iPhone without the phone.

Ahh cool. I am of no help then. My Apple problem solving skills suck, Itunes is a horrble horrible thing. Why could they make the damn thing drag and drop for music/files/etc??

The Flash player, I have no idea. The iPhone still doesn't support Flash so I can't imagine that the iTouch does either. Don't get your hopes up until there are some new updates.
Your DVDs likely have to be ripped into an MP4 format. This can be done easily, though it's time consuming and requires a fair amount of disk space to juggle. It may also require you to get something like Quicktime Pro. I'm not sure what else can convert to MP4. Start checking Google. I don't know whether you're Mac or PC, so I can't give you much help there... but Google has a lot on the subject.

As for iTunes drag-and-drop... on the Mac you do exactly that. I can't imagine it's too different on the PC. Is it?

I meant like normal hard drive style things, just drop it into the MP3 player, no dropping into itunes, converting files, and then uploading to ipod/iphone etc...

Ohhh I see what you mean.
The device that's attached to your computer appears in the left hand side of the iTunes menu, and you can drag-drop there. But you were looking for something else, I take it?

Yeah just by-passing the whole lovely itunes thing, and no conversion of files, that too sucks.

I found a great program called "imtoo rip" so far it has worked like a charm. Only catch is the full pack will run you about $100.
