Lemon Bread with Poppy Seeds
2 1/4 cups flour 1 1/4 cups sugar plus 1/3 cup sugar (divided) 3/4 cup milk 3/4 cup (1 1/2 sticks) butter, room temperature 3 eggs 2 tablespoons poppy seeds 1 1/2 teaspoon baking powder 1 tablespoon grated lemon peel 1 teaspoon salt 3 tablespoons butter, melted 1 1/2 tablespoon lemon juice
Preheat oven to 350 degrees. Grease bottom only of a 9-by-5-by-3-inch loaf pan.
In large bowl, combine flour, 1 1/4 cups sugar, milk, 3/4 cup butter, eggs, poppy seeds, baking powder, lemon peel and salt. Beat at medium speed, scraping bowl often, until well mixed, 2 to 3 minutes. Pour into prepared pan. Bake in preheated oven 32 to 40 minutes or until wooden pick inserted near center comes out clean. Remove from oven and let cool slightly.
In small bowl, make glaze by combining remaining 1/3 cup sugar, 3 tablespoons butter and the lemon juice. Stir until smooth and pour over warm bread. Cool 10 minutes. Loosen edge with knife and remove bread from pan. Makes 10 to 12 servings
