Stove-top Beef and Rice |
2 cups water
1 cup uncooked rice (not instant)
1 tablespoon butter
1 green pepper, chopped
1 small onion, chopped
1 clove garlic, minced
1 pound ground beef
salt and pepper,
1 (15 ounce) can tomato sauce
4 slices Cheddar cheese (or mozzarella)
In a saucepan bring water to a boil.
Add rice and stir. Reduce heat, cover and simmer
for 20 minutes.
Heat butter in a skillet over medium heat.
Sauté green pepper, onion and garlic until tender.
Remove from skillet, and set aside.
In the same pan, brown the ground beef until no
longer pink; drain excess fat.
Return the onion mixture to pan, season with salt and pepper.
Stir in cooked rice and tomato sauce.
Top with sliced cheese, let stand until cheese is melted.
